Solanaceae Family known as nightshade plants, this family includes the humble potato reimagined.  This ominous sounding nickname identifies the dark side of this species– the leaves and fruits that can be poisonous. Yet paradoxically they produce the most comforting and familiar staples of our menus with potatoes, tomatoes and peppers. At this time of year, we celebrate the potato- and will revisit the rest of the family in full summer when they are in their glory.  In a cool, humid, dark place, potatoes are readying themselves. Starches are turning to sugars, delicate wisps of skins are thickening. The Chef’s Garden potatoes are currently undergoing the curing process- the step between harvest and cooking that completes the development of the most delicious potatoes you will ever taste.
