What's in Season in Winter
Parsnips are one of my favorite winter root vegetables. Roasted with honey and rosemary, they serve as a heartier staple than potatoes for me, and are nutritional with plenty of fiber, vitamin C, B-vitamins and mineral content. A member of the taproot family and kin to carrots, they’re also sweet. And I like a sweet root in winter. See our recipe for Beef Stew with Parsnips and other root vegetable dishes.
